There is nothing quite like a classic Italian meal to get everyone into the foodie mood. Risotto is a great autumn plate, that is delightfully simple, yet rich and hearty, making it very popular in many Italian households, restaurants, and hospitality events. The composition of the meal itself is very versatile and is perfectly adaptable to suit different tastes. Just remember, as with many Italian recipes, less is always more, so keep this fact in mind when deciding what flavoursome ingredients you wish to include! Overall, Risotto is one of those perfect meals, which is easy to prepare and destined to impress your guests at any given dinner party or event.

Our staff at The Ibiza Catering love all varieties of risotto, from butternut squash and sage to tomato and mascarpone, and even ground beef, but we particularly admire the classic ‘Porcini Risotto’ for its effortlessness and great taste. Ideal for special occasions over a glass of great wine, or to simply set the mood for a relaxed yet elegant night with family close friends.

Our highly recommended ‘Porcini Risotto’ recipe just begs to be shared with you, directly from the hands of our executive chef, and Italian-born, Massimo Larosa! This dish allows for a sizeable main meal for up to 2 people, so if you hosting a bigger dinner party, then just double, triple, or quadruple the quantities to suit your guest size. And, of course, don’t forget a beautiful glass of wine to accompany your meal, and maybe a little antipasti to whet the appetite before the main meal arrives.

 

Porcini Risotto Massimo Larosa x The Ibiza Catering

 

The Recipe – Risotto, Wild Mushrooms, and Parmigiano

→ Carnaroli Rice 160g
→ Fresh Wild Mushrooms 220g
→ Dry Porcini Mushrooms 20g
→ Shallots 30g
→ Thyme (?)
→ Parmigiano 80g
→ Whole Milk 80g
→ Extra Virgin Olive Oil
→ Butter (?)

 

Preparation Stage 1:

→ Chop the shallots and brown over medium heat with a drizzle of oil, leave to one side
→ Sautee the fresh mushrooms with a drizzle of olive oil, leave to one side
→ Soak the dried mushrooms in a litre of hot water
→ Boil the milk, add 60g of Parmigiano, and blend together into a sauce

 

Instructions:

→ Cook the rice in a dry pan, add the soaked mushroom broth little by little, and some salt to taste for 16 minutes

→ Add 20 g of Parmigiano, 20 g of butter, the cooked shallots, and the sauteed fresh and remaining dried mushrooms from the broth.

→ Place the risotto on a flat plate, decorate with the Parmigiano sauce and a few slices of mushrooms
